Ingredients
  

  • ¾ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove finely minced
  • teaspoons dried oregano
  • teaspoons granulated sugar
  • ¼ teaspoon fine salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste

Instructions
 

Step 1:

  • Add the Dijon mustard, red wine vinegar, fresh lemon juice, minced garlic, dried oregano, sugar, salt, and black pepper to a small bowl or glass jar. Whisk everything together until the seasonings are evenly combined.

Step 2:

  • Slowly pour in the extra virgin olive oil while whisking continuously. Continue whisking until the dressing becomes smooth, slightly thickened, and well blended.

Step 3:

  • Taste the dressing and adjust the seasoning if needed. Add a little more salt, pepper, lemon juice, or vinegar to match your preferred flavor.

Step 4:

  • Pour the dressing over your favorite Greek salad, pasta salad, grilled vegetables, or grilled chicken. Store any leftovers in an airtight container in the refrigerator for up to one week. Shake well before each use, as the oil and vinegar will naturally separate.
