Ingredients
  

For the cake:

  • 4 ½ cups self-raising flour sifted
  • 2 ¾ cups caster superfine sugar
  • 6 large eggs
  • 2 ⅓ cups milk
  • 2 teaspoons vanilla extract
  • 1 ⅔ cups unsalted butter melted
  • ¾ cup rainbow soft sugar pearls for decoration

For whipped vanilla buttercream frosting:

  • 1 ¾ cups unsalted butter softened, cubed
  • ¼ cup heavy cream
  • 3 ½ cups confectioners’ sugar sifted
  • ¼ teaspoon salt a pinch
  • 1 ½ teaspoons vanilla extract
  • Pink food colouring as needed

Instructions
 

  • Preheat the oven to 180°C (350°F). Grease two round cake tins and line them with baking paper so the cakes don’t stick.
  • In a large mixing bowl, beat the melted butter with the sugar until the mixture looks smooth, creamy, and a little light in texture.
  • Add the eggs one at a time, mixing well after each addition so everything blends properly. Stir in the vanilla extract.
  • Now add the sifted flour and milk a little at a time, alternating between them. Keep mixing until you get a smooth, lump-free batter.
  • Pour the batter evenly into the prepared tins. Bake for about 35–40 minutes, or until a toothpick inserted in the centre comes out clean. Let the cakes cool completely before frosting.
  • For the frosting, beat the softened butter until it becomes soft and creamy. Slowly add the icing sugar, mixing continuously. Pour in the cream, vanilla, a pinch of salt, and pink food colouring. Whip everything until the frosting turns light, fluffy, and smooth.
  • Place one cake layer on a serving plate and spread a generous layer of frosting on top. Add the second cake layer and cover the whole cake with the remaining buttercream.
  • Finish by decorating with rainbow sugar pearls. Chill the cake slightly before serving so the texture sets nicely.
