Ingredients
  

  • 2 pints fresh raspberries
  • 1 15-ounce can tomato sauce
  • ½ cup finely chopped red onion
  • 2 garlic cloves finely minced
  • ¼ cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon liquid smoke
  • 6 tablespoons packed brown sugar
  • large chipotle peppers in adobo sauce finely minced

Instructions
 

Step 1:

  • Heat the olive oil in a medium saucepan over medium heat. Add the chopped red onion and cook for about 4–5 minutes until soft. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 2:

  • Add the tomato sauce, raspberries, apple cider vinegar, brown sugar, liquid smoke, and minced chipotle peppers. Stir everything together until the sugar has dissolved completely.

Step 3:

  • Bring the mixture to a gentle simmer. Reduce the heat to low and cook for 20–25 minutes, stirring occasionally as the raspberries soften and the sauce begins to thicken.

Step 4:

  • Remove the saucepan from the heat. Blend the sauce until completely smooth using an immersion blender or transfer it carefully to a standard blender. For an extra smooth finish, strain the sauce through a fine-mesh sieve to remove the raspberry seeds.

Step 5:

  • Return the blended sauce to the saucepan and simmer for another 5 minutes until it reaches your preferred consistency. Taste and adjust with additional brown sugar for sweetness or more chipotle for extra heat if desired.

Step 6:

  • Allow the Raspberry Chipotle BBQ sauce to cool completely before transferring it to clean jars or bottles. Refrigerate until ready to use. Serve with grilled chicken, pork, ribs, burgers, or brisket or as a flavourful dipping sauce.
