Ingredients
  

  • 1 cup fresh Thai chili peppers stems removed (about 100 g)
  • 4 cloves fresh garlic peeled (about 12 g)
  • 2 tbsp sugar brown or white (about 25 g, adjust to taste)
  • ½ cup rice vinegar or white vinegar 120 ml / 120 g
  • ½ cup water 120 ml / 120 g
  • ½ tsp salt about 3 g

Instructions
 

  • Put the Thai chilies and garlic into a blender with a small splash of water. Blend until they become finely chopped or completely smooth, depending on how you like the texture.
  • Transfer the blended mixture into a small saucepan. Add the vinegar, remaining water, sugar, and salt. Stir everything together until well mixed.
  • Place the saucepan over medium heat and bring it to a gentle simmer. Let it cook for about 5 minutes, stirring every now and then so nothing sticks to the bottom.
  • Once done, take it off the heat and allow it to cool completely. After cooling, pour the sauce into a clean jar or bottle for storage.
