Tomato and coconut milk sauce delivers a smooth balance of tangy tomatoes and creamy coconut richness. The taste opens with a mild acidity from the tomatoes, then slowly turns soft and slightly sweet as the coconut milk blends in.
Warm a saucepan over medium heat and add the oil. Once it’s hot, toss in the chopped onion and cook it gently until it softens and turns lightly golden.
Add the minced garlic and stir it around for about 30 seconds, just until you can smell its aroma don’t let it burn.
Now mix in the crushed tomatoes along with smoked paprika or red pepper flakes. Let everything simmer together for 8–10 minutes so the flavors can develop and deepen.
Slowly pour in the coconut milk while stirring continuously until the sauce becomes smooth and well blended.
Finish by seasoning with salt and black pepper. Let it simmer for another 5–8 minutes until it thickens slightly, then take it off the heat.
