Ingredients
  

  • 1/2 cup chopped onion about 80 g
  • 2 garlic cloves minced (about 6 g)
  • 8 plum tomatoes peeled and chopped (about 640 g)
  • 1 cup tomato sauce 8 oz / 227 g
  • 2 tsp dried basil about 2 g
  • 2 tsp dried oregano leaves about 2 g
  • 2 tsp dried rosemary crushed (about 2 g)
  • 1/2 tsp black pepper about 1 g

Instructions
 

  • Warm a saucepan over medium heat and, if you like, add a little oil. Toss in the chopped onion and cook it slowly for about 3–4 minutes until it softens and turns lightly golden.
  • Add the minced garlic and stir for around 30–40 seconds, just until you can smell its aroma. Be careful not to let it burn.
  • Next, add the chopped plum tomatoes and mix everything together. Cook them for 10–12 minutes, letting them break down and become juicy.
  • Pour in the tomato sauce, then sprinkle in basil, oregano, rosemary, and black pepper. Stir well so the flavors combine evenly.
  • Turn the heat down low and let the sauce gently simmer for 15–20 minutes. Stir it now and then so it doesn’t stick to the pan. As it cooks, it will naturally thicken and the flavor will become richer.
  • Finally, taste it and adjust the seasoning if needed. Serve it warm over pasta, pizza, or grilled dishes.
